
Q ARABICA GRADER COURSE
Taking the Q Arabica Grader course from the Coffee Quality Institute (CQI) is a fantastic step for any serious coffee professional. This certification is globally recognized and allows you to become an expert in evaluating coffee quality.
Overview of the 20 Exams:
1. General Knowledge:
Basic knowledge of coffee, including its production, processing, and distribution. understanding of the specialty coffee sector and how quality is determined.
2. Cupping Skills (x4 exams):
The SCA cupping form is used for scoring coffee, and you’ll need to demonstrate that you can accurately score coffee’s attributes. Cupping of 4×6 coffees including Milds, Naturals, Asia and Africa.
3. Triangulations (x4):
In this exams, you identify the odd cup from a set of three in terms of taste or aroma. 4×6 triangulations from Milds, Naturals, Asia and Africa
4. Olfactory Tests (x4)
Evaluate your ability to identify specific aromas that are important in coffee cupping. You will be exposed to 36 different aromas from the Le Nez du Café aroma kit, and you’ll have to identify them correctly. 4 families of 9 aromas: Enzymatic, Dry distillation, Sugar browning and Aromatic taints.
5. Green Coffee Grading (x1):
Evaluate green coffee based on the CQI green grading standards. This includes the identification of defects, both primary and secondary.
6. Roasted Coffee Grading (x1):
Involves evaluating roasted coffee beans and identifying any defects in the roasting process.
7. Roasted Defects (x1):
Require you to correctly identify defects such as Light, Dark, Baked and Correct roasts.
8. Organic Acid Matching (x1):
Identify the presence and concentration of various organic acids in coffee, such as citric, acetic, phosphoric and malic acid, which influence flavor.
9. Flavour standards (x1):
Identify positive and negative descriptors from FlavourActiv capsules.
10. Sensory Mixes (x2):
Recognize and order primary basic tastes individually and mixed.
